Maccarronis de busa
(Crochet Hook maccheroni)

Is maccaronis de busa, a very ancient typical Sardinian pasta, are produced only with the best durum wheat brans and water.

They are named after a tool which was used in their preparation: the crochet hook (busa or ferrittu in Sardinian language, depending on the origin area ).

In fact once obtained the mixture, this one was cut in small stripes which were winded around the crochet hook.

The particular shape, the use of the bronze wire-drawing machine and the slow drying process always favour an underdone cooking and a porous pasta able to catch the seasoning despite it's smooth.

Ideal seasonings for Is Maccheroni de Busa are meat sauces, but they can be seasoned with every kind of fish red sauce as well.
