La Casa del Grano semolina is a flower obtained by milling durum wheat. Semolina is the absolute queen of traditional Sardinian recipes, used in many breads, pastas and desserts. It is a starch-rich food with a high protein content, widely used in both bread-making and baking in general. When it comes to bread-making, suffice it to think of “pane carasau”, “su pistoccu”, the soft Sardinian flatbread, “su coccoi”, “su civraxiu”, “su moddizzosu”, all made either exclusively with semolina or mixed with flour.
