\u201cSardinian Gnocchi\u201d have made quite a name for themselves, but \u201cIs Malloreddus\u201d have their roots in the island\u2019s farming history, devoted to a culinary tradition centred around the cultivation of wheat, typical of the Mediterranean diet. The term \u201cmalloreddus\u201d (\u201cis\u201d simply means \u201cthe\u201d) is derived from \u201cmalloru\u201d, a Campidanese Sardinian term that means \u201cbull\u201d, whereby \u201ceddus\u201d is the suffix used to create the diminutive. “Is Malloreddus” thus translates into \u201cthe calves\u201d, precisely because of their curved shape recalling that of a small bull\u2019s head.
\nHousewives would prepare this delicacy using \u201csu ciuliri\u201d, the straw sieve on which small portions of the dough, made of durum wheat semolina, water and a pinch of saffron, were pressed.
\nThis would give the pasta its unique, rolled and scored shape, making Is Malloreddus<\/a> an iconic dish that continues to grace Italian tables to this day, thanks to La Casa del Grano\u2019s traditional pasta.<\/p>\n","protected":false},"excerpt":{"rendered":"
