Es un producto t\u00edpico italiano y puede incluirse con raz\u00f3n en la categor\u00eda de <strong>productos diet\u00e9ticos<\/strong>. Un an\u00e1lisis de composici\u00f3n qu\u00edmica muestra que no difiere mucho de la s\u00e9mola de trigo duro tradicional o de la pasta granulada (pasta blanca refinada): la cantidad de carbohidratos y prote\u00ednas es pr\u00e1cticamente la misma, mientras que la acidez es progresivamente m\u00e1s tolerable y puede ser hasta un 50% mayor que la de la s\u00e9mola de trigo duro. El contenido de cenizas de la pasta es un valor que indica su grado de refinamiento y, tras un examen cuidadoso, parece ser m\u00e1s abundante en los productos menos refinados. Precisamente debido al contenido de cenizas, entendido como sales minerales, que en la pasta integral registra una mayor fluctuaci\u00f3n que en la pasta blanca, este alimento cuenta con un <strong>mayor contenido de fibra diet\u00e9tica<\/strong>, un mayor contenido de grasas y prote\u00ednas y, sobre todo, una menor concentraci\u00f3n de carbohidratos. Otro aspecto destacable es el aporte cal\u00f3rico: la pasta integral tiene pr\u00e1cticamente el mismo valor energ\u00e9tico que la pasta blanca, con una carga gluc\u00e9mica casi id\u00e9ntica, pero con un \u00edndice gluc\u00e9mico significativamente menor y un \u00edndice de saciedad ligeramente superior. Contrariamente a la creencia popular, la pasta es un componente esencial de una dieta saludable, especialmente para los deportistas. Los carbohidratos son, sin duda, la principal fuente de energ\u00eda para un buen rendimiento y bienestar general.
