Is Maccarronis de Busa or “maccheroni al ferretto” owe their unusual name to the tool that was used to prepare them in the olden days, i.e. a knitting needle (called “busa” in the Sardinian language) where the dough is cut into tiny strips and wrapped around it.


The specific shape and processing method, the use of bronze wires and a slow drying technique turn the “Is Maccarronis de Busa” into a coarse and porous pasta that captures and retains the condiment.
