La Casa del Grano wheat and durum wheat flour are essential ingredients of Mediterranean cuisine. Rich in gluten, flour-based doughs are ideal in recipes that require natural leavening. It can also be used to create unleavened bread-like foods, leavened desserts, creamy spoon desserts, fresh or dry pasta, pan-fried or fried foods with a flour coating or batter, thickened sauces and more. Flour is classified in the essential food group. It is a cereal derivative characterised by a high content of complex carbohydrates, an average fibre content, mainly water-soluble B-group vitamins and minerals.

La Casa del Grano flours, made from soft wheat, each have distinct characteristics depending on how they are milled. The outer layers (bran and middlings) are excluded from the refining process, resulting in an exceptionally white product primarily composed of starch. The other components of flour include: cellulose, fat, protein, water, salt and vitamins. Classic Type-00 Flour stands out as the most refined, since it is obtained by milling and subsequently sifting (ground product yield, extraction rate) the wheat, freed from foreign substances and impurities. It is used mainly to prepare bread, pasta and typical Sardinian desserts. Granito Type-00 Flour, on the other hand, is a professional flour used to make fresh pasta, gnocchi and desserts, as well as for dusting in bread and pastry-making. It can be used on its own or mixed with durum wheat semolina or strong flours. It is extracted by milling carefully selected grains, resulting in a finely grained rather than powdery granular flour.
