It is one of the oldest typical Sardinian pasta types, which takes its shape by wetting the semolina in an earthenware container (the typical “scivedda”) and working it in circular motions by hand until obtaining the small, irregular shaped pasta balls. These small balls were then separated into small, medium and large sizes before being oven-roasted to brown them and give them their characteristic taste. Our fregola is available in three sizes and, thanks to the special workmanship, is pleasantly textured and porous, perfect for catching the characteristic fragrances and flavours of our land.
