Coarse semolina
La Casa del Grano semolina is a flower obtained by milling durum wheat. It is a starch-rich food with a high protein content, widely used in both bread-making and baking in general. Semolina is the absolute queen of traditional Sardinian recipes, used in many breads, pastas and desserts. When it comes to bread-making, suffice it to think of “pane carasau”, “su pistoccu”, the soft Sardinian flatbread, “su coccoi”, “su civraxiu”, “su moddizzosu”, all made either exclusively with semolina or mixed with flour.

Bakery products made with La Casa del Grano durum wheat semolina have a higher antioxidant content compared to other foods, such as red grapes, which are commonly regarded as a prime source of antioxidant nutrients. The technological and nutritional characteristics are higher than those of other cereal flours because it allows improved water absorption and retention, giving semolina a better production yield and longer shelf life.
