Sa Fregula Sarda

Sardinian Sa Fregula or fregola is a variety of durum wheat pasta in the form of small, medium and large balls ranging in size between 2 and 6 millimetres, oven-roasted and paired with sauces, broths and various types of meat- or fish-based condiments. The name “fregula” is derived from the Latin “ferculum”, meaning crumb, or fragment. It can be cooked as a risotto, pasta dish or soup base, and even as a fresh summer salad. To this day, in our factory, we can still reproduce the ancient manual technique – using an industrial process – whereby the irregular balls were obtained by working the semolina in an earthenware bowl (called “sa scivedda”) and then roasted in the oven.

It is one of the oldest typical Sardinian pasta types, which takes its shape by wetting the semolina in an earthenware container (the typical “scivedda”) and working it in circular motions by hand until obtaining the small, irregular shaped pasta balls. These small balls were then separated into small, medium and large sizes before being oven-roasted to brown them and give them their characteristic taste. Our fregola is available in three sizes and, thanks to the special workmanship, is pleasantly textured and porous, perfect for catching the characteristic fragrances and flavours of our land.
