Method

  1. Wash and clean the various vegetables: cut them into matchsticks more or less the same length as the Is Malloreddus
  2. Blanch them for about 3 minutes in a pot with boiling salted water, then drain and place them separately in ice water
  3. Again separately, grill the vegetables over high heat with some evo oil and add salt and pepper to taste
  4. Cook the Is Malloreddus fini Zafferano in a generous amount of salted water for about 10 minutes
  5. Drain the Is Malloreddus and toss them in a pasta mixing bowl with the grilled vegetables
  6. Add evo oil and dried mint to taste
  7. Serve the Is Malloreddus fini Zafferano: they can also be enjoyed cold if you prefer
