Method

  1. Cut the lamb into small pieces and brown it with onion, garlic and rosemary in a large pan for about 15 minutes, adding a glass of water, salt and pepper if necessary
  2. Clean, wash and put the artichokes into acidulated ice water, cut them into quarters and blanch them for about 4 minutes in a saucepan with salted water, then drain and put them in ice water again
  3. Grill them in a pan with evo oil over high heat until the outside is burnt, then add salt and pepper to taste
  4. Cook the Is Malloreddus 4 sapori fini in a generous amount of salted water for about 10 minutes, then drain and toss them while still hot in the pan with the lamb
  5. Add the artichokes and a drizzle of evo oil
  6. Plate the Is Malloreddus 4 sapori fini and garnish with a few sprigs of rosemary
