Method

  1. Cook Is Malloreddus in a generous amount of salted water. Add 4 tablespoons of cooking water in a pan over medium heat
  2. Drain Is Malloreddus and pour them into the pan together with the saffron until the pasta has absorbed almost all of the cooking water
  3. Remove from the heat and add the Pecorino, continuously stirring to develop a cream
  4. Add a generous amount of pepper, 2 tablespoons of extra virgin olive oil, mix well and serve

  • 100 g Young Pecorino
  • 15 saffron pistils
  • extra virgin olive oil
  • ground pepper
