Medium Sardinian Sa Fregula is the most ductile and creative shape in this line of traditional pasta. The special processing and roasting method gives dishes an enveloping aroma, making this pasta perfect for pairing with any sauce. It is an excellent alternative to quinoa and rice for preparing pasta dishes that require special creaming, perfectly catching the sauce thanks to its deep texture and creating the perfect balance of taste and consistency on the palate. To this day, in our factory, we can still reproduce the ancient manual technique, whereby the irregular balls were obtained by working the semolina in an earthenware bowl (called “sa scivedda”) and then roasted in the oven. It is the pasta shape to keep in your pantry, always.
