Method

  1. In a pan, pour a drizzle of extra virgin olive oil and Sa Fregula Sarda.
  2. Let’s toast lightly.
  3. We proceed by adding the vegetable broth little by little (previously prepared with a few vegetables and left at temperature), until the pasta is cooked, about 10′.
  4. In the meantime, wash and clean the radicchio, cut it into strips and keep it aside.
  5. With the heat off, whisk Sa Fregula Sarda with half the gorgonzola.
  6. Once the cheese has completely melted, add the radicchio.
  7. With the help of a pastry cutter, plate Sa Fregula Sarda, adding the remaining gorgonzola cut into cubes, the rest of the radicchio and the walnut kernels.
  8. A drizzle of olive oil and the dish is ready.

  • 1.5 liter vegetable broth
  • 300 g gorgonzola
  • 200 g radicchio
  • 6/8 nuts
  • evo oil to taste
  • salt to taste
