Method

  1. Wash and clean the turnip greens and set aside a few flowers and small leaves
  2. Cook the remainder in plenty of salted water, drain and blend with extra virgin olive oil and chilli pepper, adding some cooking water if necessary. Keep the turnip top extract aside to cook the thimbles
  3. Quickly plate the flowers and leaves in a pan with extra virgin olive oil, salt and chilli pepper
  4. Julienne cut some lemon peel
  5. Cook the Ditali Integrali in turnip greens extract
  6. Serve the Ditali Integrali with their extracted broth, some turnip flowers and leaves, freshly cut chilli pepper and lemon

  • 1 fresh chilli pepper
