Method

  1. Clean the peppers and toss them over high heat in a pan, keeping the colours separate
  2. Create two distinct creams with a blender and add a drizzle of olive oil, salt and pepper
  3. In the time it takes to cook the pasta, bring the two pepper creams up to temperature
  4. Mix the Ditali rigati in with the creams
  5. Season the dish with some dried oregano to enhance the flavours
  6. Add grated Pecorino or some toasted bread crumb to taste

  • 200 g yellow peppers
  • 200 g red peppers
  • 10 g dried oregano
  • Evo oil, q.s.
  • Salt, q.s.
