Method

  1. Using a food processor, blend the Pecorino and Parmesan cheese into a fine grain
  2. Fully melt the cheeses in a saucepan, adding some cream brought to a first boil
  3. Set the resulting cheese sauce aside at medium temperature
  4. Cook the Is Malloreddus piccoli 3 in a generous amount of salted water
  5. When cooked, drain the Is Malloreddus and top with some of the melted cheese sauce
  6. Plate the Is Malloreddus piccoli 3 on a bed of cheese sauce and grate the nutmeg on top to taste
