Method

  1. Let’s start with the cleaning of the cardoncelli mushrooms
  2. Gently remove impurities with a damp cloth
  3. Cut them into thin slices, remove the stem which you will use to prepare the broth in which you will cook La Casa del Grano Sa Fregula Sarda media
  4. Now sauté the mushrooms in the pan with a drizzle of extra virgin olive oil and the aromatic herbs
  5. Proceed with cooking the Sa Fregula Sarda media in broth, adding the cardoncelli mushrooms
  6. Lastly, generously grated salted ricotta
