Method

  1. Blanch the fregola in plenty of salted water for 4 minutes, drain it and place it on a small baking tray
  2. Heat the broth in a saucepan
  3. Bring it to the boil adding in sequence the celery leaves, the basil, the artichokes cut into thin slices and the carrots
  4. Then add the chives, season with salt and add the fregola
  5. Bring everything back to the boil and once cooked, serve
  6. Finally, take the casu axedu cut into pieces, season it with the extra virgin olive oil and arrange it on each plate in no particular order so that it melts evenly

  • 1 liter of good meat broth
  • 2 artichokes
  • Celery leaves to taste
  • 4 new carrots
  • 1 bunch of chives
  • 4 basil leaves
  • 100 g of casu axedu
  • Extra virgin olive oil
  • Salt and pepper to taste
