Method

  1. Finely chop the radicchio and onion and brown for about 2 minutes in hot oil
  2. Pour half a liter of broth, previously prepared and salted
  3. Add Sardinian Sa Fregula media La Casa del Grano, bring to the boil and allow the broth to be absorbed
  4. Add the remaining broth little by little and if necessary, stirring with a wooden ladle
  5. After cooking, sprinkle with a little freshly grated pecorino and mix until the cheese strings
  6. Serve hot

  • 300 gr “Sa Fregula Sarda media” La Casa del Grano
  • 1 liter vegetable broth
  • 1 head of radicchio
  • 1 sachet of saffron
  • 1 small onion
  • Fresh grated pecorino to taste
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste
