In antiquity, its unusual form recalled the fullness of a “calf” and was obtained by skilfully and lightly pressing on the dough with one’s fingertips on a straw basket to create its characteristic thin lines. Malloreddus is effectively the diminutive of “malloru”, which in Campidanese Sardinian means “bull”, hence the diminutive, “calf”. Today, “La Casa del Grano Is Malloreddus” are produced by combining the best durum wheat semolina and water. The “bronze drawing” creates a pasta with a characteristic texture that’s beautiful to look at with a delightful feel. The slow drying process at low temperature, on the other hand, improves the pasta’s flavour and fragrance during cooking, while preserving its high protein content.

The origins of this product are rooted in a centuries-old tradition. Traditionally, this particular form was obtained by skilfully pressing on the dough – placed on a straw basket – with one’s fingertips, thus imprinting the characteristic thin lines through the application of slight pressure. Inspired by homemade pasta in line with the most ancient traditions, our pasta is made exclusively from bronze dies, resulting in a perfectly textured, beautiful-to-look-at and pleasant-feeling pasta, able to catch and retain delicious sauces and enhance the flavour of any recipe. The slow drying process at low temperature improves the pasta’s flavour and fragrance during cooking, while preserving its high protein content. Only the best semolina is carefully selected, and ongoing, strict monitoring of the entire health and hygiene system ensures the utmost genuineness of our products.
